About the project
To date, Project Green Fork restaurants have recycled more than 4 million pounds of plastic, glass, aluminum, cardboard, and paper and have prevented more than 200,000 gallons of food waste from entering a landfill. All of that compost from these restaurants has been dropped off at various small urban gardens and farms in the city, but we are quickly outgrowing those places. We have partnered with an area farmer who would love to have our food waste, but we need an efficient and workable way to get it the 65 miles to his farm. The project will be to purchase a dump trailer to complete the cycle of restaurant waste to garden soil.
The Steps
Locate and purchase a large capacity dump trailer
Design and install graphics on trailer showing purpose, while educating and encouraging the public to think about composting
Secure insurance
Anticipate and plan for maintenance costs
Get it rolling
Why we‘re doing it
Memphis is a city on the rise, with a citizenry that is motivated and energized to make their home a better, more just and sustainable city for all. PGF has been a central part of that shift and wants to continue to expand its roster of certified restaurants. As it now is under the umbrella of Clean Memphis, a nonprofit that has been doing incredible work to keep Memphis clean and beautiful, PGF and its composting and recycling initiatives dovetail perfectly with the overall goal of making Memphis cleaner, greener, and more sustainable.
