Beignets 2 Go is a dessert food truck with a major hub in Historic Eastern Market. Since our inception in 2014 we have experienced tremendous growth and popularity. We began as a Saturday only operation and are now at a point of expansion into several days a week. In order to reach our full potential we are in need of our own commissary. As we build out this commissary one of our first priorities is the installation of a refrigeration and freezer system. This equipment will help us streamline our production potential while increasing our storage capbabilities. It will also provide us quicker access and turn-around time for our consecutive events.
the steps
We are actively renovating a building that will serve as our commissary. We have already selected the refrigeration and freezer system needed for the first part of this project. Eastern Market Growing Communities has graciously agreed to match donations. Once our first financial goal is met we will place our equipment order and eagerly await it's arrival. Once the equipment is installed we will put a checkmark next to the completion of the first priority on our list of commissary renovations.
why we're doing it
One of the major issues we face as a food truck business is the amount of storage space available on the truck. On days with successive events the need to restock is inevitable. Having a commissary within close proximity to our regular events with a greater storage capacity will help us serve our customers more efficiently. Another issue we face is providing 30 or more consistent weekly hours of employment opportunity for our staff. Having greater storage capacity will allow us to book more events on a regular basis, which will in turn provide steady daily and evening working hours. Increased production will help us retain employees who are often looking to work more than just 1 or 2 days out of the week.
